Instructions
- 1.
To a
large frying pan, add olive oil and onion – fry for ~5 mins on medium heat

Add in the garlic and cook for ~30 secs
- 3.
Add ground coriander, cumin, smoked paprika and tomato pureé – stir until covered
- 4.
Spoon in the chipotle paste and mix together
- 5.
Toss in the mushrooms and mix until covered
- 6.
Lastly, add the
soy sauce and vegetable stock – cook for ~5 mins
- 7.
To a
bowl, mix tomatoes, red onion, jalapeños, lemon juice, salt and pepper
- 8.
Serve on flatbreads, with mayo, avocado, tomato salad and mushrooms on top
