Instructions

  1. 1.

    To a large frying pan, add olive oil and onion – fry for ~5 mins on medium heat

  2. 2.

    Add in the garlic and cook for ~30 secs

  3. 3.

    Add ground coriander, cumin, smoked paprika and tomato pureé – stir until covered

  4. 4.

    Spoon in the chipotle paste and mix together

  5. 5.

    Toss in the mushrooms and mix until covered

  6. 6.

    Lastly, add the soy sauce and vegetable stock – cook for ~5 mins

  7. 7.

    To a bowl, mix tomatoes, red onion, jalapeños, lemon juice, salt and pepper

  8. 8.

    Serve on flatbreads, with mayo, avocado, tomato salad and mushrooms on top
